Gareth Dwyer - New Team Member - September 2009
Gareth Dwyer is the newest member of the Development Team at Roberts of Port Dinorwic Ltd. Gareth joined the team in August 2009; he brings with him a wealth of experience having had fifteen years of cooking experience. Over the years Gareth has worked at various 2 & 3 AA** Rosette Hotels & Restaurants across North Wales , including the position as Head Chef at one of the areas leading Hotels.
Gareth is also an active member of the Welsh Culinary Team & has been so since 1999. As part of this team he has cooked for the Prime Minister & various members of the Welsh Assembly when entertaining His Royal Highness the Prince of Wales. In 2000 Gareth won the title of Junior Chef of Wales & the following year made it into the finals for North Wales Chef of the Year. From 2003 Gareth was a finalist for the National Chef of Wales for three years running & each time successfully took home second place. The finalists at the national culinary contest face one of the toughest challenges, whereby they are each presented with a box of ingredients on the day of the competition, this meaning that they will have no time to practice any of their dishes. Mr Tinsley from the judge’s panel commented that this is the ultimate challenge to find out who the best chef is! Here is the menu that Gareth served up for the competition;
Starter
Terrine of John Dory & a lobster wrapped in smoked trout with Jerusalem artichoke, beetroot orea & sultana & caper dressing
Soup
Shitake & thyme soup
Main
Roulade of chicken with bean puree, braised potato, stuffed roast onion & lamb pativier & port wine jus
Dessert
Apple & cinnamon curd parfait, rhubarb syllabub, braised rhubarb & caramelised apples
During November 2005 Gareth was part of the winning Welsh Culinary team that travelled to Switzerland to compete at the World Culinary Masters competition. The chefs collected a gold medal for their cold buffet table & silver in the hot kitchen. Gareth has travelled to various countries with the Welsh Culinary Team & is hoping to compete in Singapore at the FHA Culinary Challange in April 2010 & Roberts of Port Dinorwic Ltd wish him success in this.
Gareth brings with him a wealth of new recipe ideas & is looking forward to working with Roberts of Port Dinorwic Ltd’s customer’s on some fantastic & flavoursome new product ideas.
